Product Descriptions

ORGANIC EXTRA VIRGIN OLIVE OIL FROM AZ AGRICOLA BARBADORO, Montespertoli, Florence. Certified organic Italian extra virgin olive oil, harvested and pressed the same day, cold-pressed, and filtered.

ORGANIC CAYENNE PEPPER DRESSING FROM Azienda Peperita, Tuscany.
Dressing made with 90% extra virgin olive oil, flavored with cayenne pepper. Castelluccio di Norcia Lentil PGI (Protected Geographical Indication) has always been cultivated on the karst plains of Castelluccio, within the Monti Sibillini National Park, at an altitude of approximately 1,500 meters. The average annual production is limited, making it a niche, unprocessed product. Its remarkable nutritional qualities: all its proteins, vitamins, fiber, and minerals make it excellent for those who require a diet rich in iron, potassium, and phosphorus, low in fat, and highly nutritious. The thin, tender skin
allows cooking directly without soaking, significantly reducing preparation time.

TRASIMENO BEAN: A typical product of the Trasimeno area, revitalized in modern cuisine, it has well-defined characteristics such as the small black spot on the seed’s surface, its weight, color, and flavor. Sowing takes place in spring and harvesting occurs from August to September. Cultivation is carried out with full respect for the environment. Due to its small size, it is sufficient to rinse and boil it in plenty of water for about 45 minutes. It is ideal to enjoy it plain, seasoned with good extra virgin olive oil, salt, pepper, and perhaps a clove of garlic. It can be used to prepare delicious dishes: bruschetta, bean and truffle soups, stuffed ravioli, and tagliolini with bean.

The SORANA BEAN PGI is a Tuscan white bean, known locally as “piatellino” (small flat bean). It’s irregularly shaped, flattened, and has a smooth, thin skin. It’s small and grown in small plots along the Pescia River in the province of Pistoia. It’s highly digestible and best enjoyed cooked “in a flask,” or in a wide-mouthed glass container. When cooking, add water, a clove of garlic, and sage to the beans. Then, cook them over low heat.

After cooking, season with a drizzle of Tuscan extra virgin olive oil and freshly ground pepper.

ORGANIC PICCINO CHICKPEAS, also known as “pink chickpeas” due to their color, have an intense and pleasant flavor, and their thin skin makes them unique and highly prized. They can be cooked in a variety of ways, always with excellent results. They are soaked the day before with a pinch of salt and then cooked for about three hours over low heat.

ORGANIC ZOLFINO BEAN Characteristics: Zolfino beans are small, slightly rounded, with a thin skin and a buttery texture. Their flavor is delicate and persistent, and they melt in the mouth. We recommend the traditional preparation, without soaking, with a long cooking time of 3–4 hours over low heat,
with just a clove of garlic and a few sage leaves.
It’s used in Tuscan recipes like ribollita, pasta and beans, and fagioli all’uccelletto (beans all’uccelletto), but it’s also excellent simply boiled with a pinch of pepper and fruity, intense extra virgin olive oil.

SELEKTIA DRIED PORCINI MUSHROOMS
Top-quality porcini mushrooms dried at the right temperature based on their moisture content, to best preserve their distinctive flavor and appearance. With an intense, unmistakable aroma, the product, after being washed and soaked in hot water for about 20 minutes, is ready to be used in the preparation of first courses or as a side dish for meat and fish.
